Hyaluronic acid was first applied in the food industry in Japan and the United States. In 1996, when the Ministry of Health, Labour and Welfare of Japan published the list of existing additives, both the chicken comb extraction method and the microbial fermentation method were included as sources of hyaluronic acid. Around 2000, the Japanese market for food containing hyaluronic acid began to expand on a large scale. The products were mainly targeted at improving skin moisture, enhancing beauty and maintaining health. Besides health food, many ordinary food types containing hyaluronic acid also emerged in the Japanese market, such as fruit juices and soy milk. Subsequently, in the US market, products containing hyaluronic acid began to appear as health supplements, following chondroitin sulfate and glucosamine. They became the third generation of products for improving knee joint function and were widely recognized by consumers.
